Ingredients
1 1/2 cup of rice
8 oz fresh spinach
1 TBS of ghee or oils
2 bay leaves
1 tsp of coriander powder
2 1/3 cup of water
salt
1/2 cup of unsalted peanuts is lightly toasted (optional)
ground black pepper
Preparation and cooking time from 30/40 minutes
Wash the rice and drain it. Wash the spinach well and drain. Soften the leaves by blanching them, pass them in a colander under cold water and cut them into small pieces. In a medium saucepan, heat the ghee and fry the bay leaf with the coriander powder. Add the rice immediately and fry stirring until the grains become shiny. Add the spinach, stir for a minute, then pour the water into the pan, salt and bring to the boil. Cover and cook over low heat for 15 minutes. If you also add peanuts, add them without stirring 5 minutes before turning off the heat. Pepper
